Recipe
This homemade pizza is deliciously different. It has a base of barbecue sauce topped with black beans, corn, tomatoes, and peppers. You can make your own pizza dough, buy refrigerated or frozen dough, use a pizza crust mix, or a purchase a premade crust.
Ingredients:
2 plum tomatoes, diced
1 cup canned black beans, drained & rinsed
1 cup corn kernels (fresh, frozen, or canned)
1 pound pizza dough, homemade or store bought (see dough recipe below)
1/2 cup barbecue sauce
1 red bell pepper, cut in thin strips
1 cup shredded part skim mozzarella cheese
Cilantro, chopped for garnish
Pizza Dough Ingredients (optional)
1 ¼-ounce package active dry yeast
1 cup warm water (110°F)
1 Tbsp honey
1 ¼ cups whole-wheat flour
1 ¼ cup white flour, plus extra for rolling
1 Tbsp olive oil, plus extra for brushing
1 tsp salt
Instructions
Preheat oven to 425°F
Combine tomato, beans, and corn in a medium bowl.
If making your own dough, on a floured surface, use your hands or a rolling pin to work dough into a circle 14-inches in diameter. Transfer dough to a parchment-lined baking sheet. (The pizza with the parchment paper will go directly into the oven, but not the baking sheet.) If using a store-bought dough, follow the instructions on the label.
Spread the barbecue sauce evenly on the dough. Distribute the corn, tomato, and black bean mixture. Arrange the red pepper slices. Top with cheese.
Slide the pizza and parchment paper directly onto the oven rack. Bake for 15 to 20 minutes or until crust is browned and cheese is melted. Remove from oven by sliding a baking sheet under the parchment paper.
Garnish with chopped cilantro
Pizza Dough Instructions (optional)
Dissolve yeast and honey in warm water. Let stand until bubbles form, about 5 minutes.
In a large bowl combine flour, oil, salt, and yeast mixture
Mix, using floured hands. Add flour until a stiff dough is formed.
Brush a large bowl with olive oil. Form dough into a ball and transfer to the oiled bowl.
Cover and put in a warm place for 1 to 1 ½ hours, or until dough has doubled in volume.
Place dough on a floured work surface and knead for 5 minutes. Use immediately or refrigerate or freeze for later use.
