Roasted crispy chickpeas meet tender cauliflower, sweet apple, and creamy avocado, all tossed in a tangy honey-mustard-lime dressing. Packed with flavor, fiber, and plant-based protein, it's a healthy and delicious meal or side perfect for any occasion.

Ingredients:

Cauliflower salad:

  • 1 14-oz can chickpeas, drained and rinsed

  • Chili powder

  • Salt

  • Ground black pepper

  • 1 head cauliflower, cut into small florets

  • 1 apple, sliced thin

  • 1 shallot, sliced thin

  • Handful of fresh parsley and mint

  • 2 firm avocados, cut into chunks


Dressing:

  • 2 tbsp grainy mustard

  • 2 tbsp honey

  • 0.25 cup olive oil

  • 0.25 cup water

  • Juice and zest of one lime


Instructions:

Preheat oven to 400°F. Place chickpeas on a baking sheet lined with parchment. Drizzle with olive oil, and sprinkle with salt, pepper, and chili powder to taste (chickpeas may be poured into a bowl, tossed with olive oil and spices,and then spread onto a baking sheet). Roast for 20-30 min until crispy and browned.

Add all dressing ingredients to a jar and shake well. Toss with cauliflower, chickpeas, apple, shallot, and avocado.
