Editor's comment- This recipe is appropriate for a low calorie, low fat, low cholesterol, high fiber, vegan dietary regimen.
Ingredients:
2 medium russet potatoes
2 Tbsp olive oil
½ tsp salt
½ tsp garlic powder
½ tsp paprika
¼ tsp pepper
¼ tsp turmeric
Directions:
Preheat oven to 425°F and line a baking sheet with parchment paper.
Wash potatoes (do not peel to add fiber and crunch) and cut into thin strips (about ¼-by-¼ inch)
Soak potato strips in cold water for 10 to 15 minutes. Remove from bowl, rinse, and dry with a paper towel.
Toss fries with oil.
Mix dry spices together in a small bowl. Slowly add spice mixture to fries, tossing to ensure spices are distributed evenly.
Distribute fries in a single layer on the baking sheet. Place in preheated oven and bake for 30 to 40 minutes, or until they are golden brown with crispy edges.
