Pomegranate Chicken Recipe
This festive colorful dish adds a tangy pomegranate sweetness to a simple chicken meal. Plan ahead when making it; allowing it to marinate for four or more hours infuses the flavor throughout the chicken.
Ingredients:
8 boneless skinless chicken thighs
1 tsp salt
2 tsp olive oil
1/2 +1/4 cup pomegranate molasses
1/2 cup pomegranate juice
3 cloves garlic, diced
1/8 c honey
2 Tbsp balsamic vinegar
1/4 tsp red pepper flakes
1 Tbsp lime juice
1 cup rice, uncooked, white or brown
1/2 cup pomegranate arils (the little berries)
3-4 sprigs fresh parsley
Instructions
Salt chicken thighs and let set for 15-30 minutes
Prepare a marinade by whisking together the olive oil, ½ cup pomegranate molasses, pomegranate juice, diced garlic, honey, balsamic vinegar, red pepper flakes,& lime juice.
Mix the chicken & marinade in a bowl. Cover and refrigerate for 4 to 24 hrs.
Preheat oven to 375 degrees.
Add chicken & marinade to oven proof pot and cook uncovered for 30 to 40 minutes until internal temperature reaches 165 degrees.
Cook rice.
Spoon chicken over rice and drizzle with remaining ¼ cup pomegranate molasses.
Top with pomegranate arils and parsley
