Ingredients:

  • 2 tbsp unsalted butter

  • 1 lb medium shrimp, peeled and deveined

  • 3 cloves garlic, minced

  • 0.5 tsp red pepper flakes, or more, to taste

  • 0.25 cup white wine

  • Juice of 1 lemon

  • Kosher salt and freshly ground black pepper, to taste

  • 1.5 lb (4 medium-sized) zucchini, spiralized

  • 2 tbsp Parmesan cheese,* freshly grated (optional: for lacto-vegetarians, use rennet-free alternative)

  • 2 tbsp fresh parsley, chopped (optional)


Instructions

  1. Melt butter in a large skillet over medium-high heat.

  2. Add shrimp, garlic, and red pepper flakes.

  3. Cook, stirring occasionally, until pink (about 2-3 min).

  4. Stir in wine and lemon juice; season with salt and pepper, to taste.

  5. Bring to a simmer; stir in zucchini noodles until well combined (about 1-2 min).

  6. Serve immediately, garnished with Parmesan cheese and parsley, if desired.
